Sill – pickled herring

PICKLED HERRING

Something that makes the table every Midsummer, Easter and Christmas is the pickled hearing. It has a very strong taste which some people don’t like. Children tend to not like pickled hearing, but with age they seem to grow found of the taste of it.

Ingredients:

  • 1 red onion
  • 1 carrot
  • A small piece of leek
  • 100 ml vinegar essence (12%)
  • 200 ml sugar
  • 1 bay leave
  • 10 allspice corn
  • 400 g herring fillets

Preparations:

1. Peal and slice the onion and carrot. Also rinse and slice the leek.

2. Boil 30 ml water and together with the vinegar essence, sugar, bay leave and allspice corn.

3. Let the mix cool off and then add the vegetable.

4. Rinse the hearing filets, cut them into smaller pieces and add them in the mix as well. Leave the hearing in the fridge for at least 48 hours before enjoying it. [1]
